Mediterranean Lentil Soup

Hey Everyone! Happy December, meatless Monday and finals week! Woohoo! 

My gut health has been out the window the last few weeks, so I have been getting back to my Mediterranean based lifestyle.  My honeymoon is coming up in January, so I have been working hard with getting my body super healthy, with food and working out. Finals week is also here, getting ready to apply for internship and all that good stuff! 

It's Monday- so I'm doing Meatless Monday! This recipe is for a Mediterranean Lentil Soup! It's super light, yet bursting with flavor! Are you ready to try it? Find the Recipe below!

Mediterranean Lentil Soup (Crock-Pot Style)

Ingredients: 

  • 1/2 chopped onion
  • 2 peeled carrots
  • 5 cups vegetable broth
  • 2 cups water
  • dash salt/pepper
  • dash red pepper flakes
  • 1 1/2 cups chopped kale
  • 1 1/2 cup green lentils (any lentils are fine!)
  • 1 diced tomato
  • 2 Tbsp. Garlic or garlic powder
  • 1 Tbsp. thyme
  • 1 Tbsp. ground cumin
  • 3 Tbsp. Turmeric

Directions:

  •  Chop the vegetables, and put them in the crock-pot with the broth and water. 
  • Add Spices
  • Put Crock-Pot on low for 3-4 hours, since it is all vegetables, it does not take long!
Enjoy with some hummus and Pita!! It's a great side to pair with this dish! I also topped it with a little bit of Feta Cheese! :)

Turmeric- anti-cancer, antioxidant, anti-bacterial and viral, anti-inflammatory! You can even put it on a wound to prevent infection!
Cumin- Immune System benefits, aids in digestion, helps with bloating, anti-inflammatory!
Garlic- Anti-cancer, improves cholesterol and controls blood pressure!
