Lasagna Skillet

This recipe is great for those who are trying to clean up their diet, lose weight & count macronutrients (even those on the 21 day fix, which is very popular). Italian food is one of my favorites, but it can be so heavy and full of fat and carbs. I love pizza and I love lasagna, but it isn't good for the figure ALL the time (moderation is key). This is super easy and delicious. This makes 6 servings.

Macros per serving: 256 calories, 5.8g fat, 22g carbs, 28g protein

Ingredients:
- 1 pound ground meat ( I used turkey, for these exact macros)
-2-2.5 cups brown rice
-1 tbsp. garlic powder
-salt & pepper
- 1 tsp oregano
- 1 tsp basil
- 1/2 cup low fat cottage cheese
- 3/4 cup low fat shredded mozzarella
- 2.5 cups marinara (I used smart prego)


Directions:
-Preheat oven to 325 degrees
- Heat skillet & cook the meat. Once the meat is cooked, add the seasonings (oregano,basil,garlic) & salt and pepper.
- Add the marinara sauce, bring to a boil and let simmer for about 5 minutes.
-Add rice, stir in to the sauce and meat mixture- add a little more salt & pepper for taste.
- Spread the low fat mozzarella cheese on top of the skillet, place in the oven until the cheese has melted
-Add dollops of low fat cottage cheese to the top and serve.
