Mozzarella turkey meatballs & broccoli rice risotto

Hello Everyone! I haven't forgotten to post, I've just been crazy with school and being out of town. Tonight I made an amazing, wholesome dinner! Turkey meatballs stuffed with mozzarella and a broccoli, brown rice risotto. So. Good. Recipe for both is below!



Mozzarella Turkey Meatballs
Ingredients:
-1 lb ground turkey
-1 egg
- 1 tbsp.  Italian seasoning
-2-3 low fat mozzarella cheese sticks, chopped into 1/4 pieces
-1 tbsp. olive oil
- 1 cup tomato sauce


Directions:
-Preheat oven to 400 degrees
-mix the turkey, egg and Italian seasoning, roll into balls and put a piece of the cheese stick in the center. Repeat for all of the meatballs.
-Heat the olive oil in a pan, for about 30 seconds each side, brown the meatballs
-place on a baking sheet and cook for 20-25 minutes, until slightly brown and done.
-Pour tomato sauce on top (after warmed) and serve.


Easy Broccoli-cheese-brown rice risotto


Ingredients:
- 1 1/2 cups low sodium chicken broth
-1 bag frozen broccoli florets
-2 cups brown rice (you can use Uncle ben's precooked and just drain the broth when it's heated) or use uncooked rice
-1/2 cup shredded low fat cheese
-dash of salt, dash of pepper


Directions:
-Heat 1 1/2 cups of low sodium chicken broth on medium heat. I used ready rice, put it into the broth and stirred for about 8-10 minutes. If you would like to use uncooked rice- heat 1 cup of broth and add the rice, and add the rest. You would want to add the broth slowly. I thought it was quicker and just as good to use ready rice.
-I then drained the broth, added the cheese and the cooked broccoli (follow the directions on the bag to cook broccoli)
-Once it's all stirred in, add a dash of salt and pepper. Serve immediately.

This has been one of my favorite meals and it's different and wholesome. I highly recommend! :)
