Veggie Stuffed Portabella Mushrooms

This recipe is simple, delicious, great for "meatless Monday" and is great paired with rice pilaf, a pasta dish or even a coleslaw.


Ingredients:
-4 portabella mushrooms
-2 tbsp. Olive oil
-1 zucchini, diced
-1 red pepper, diced
-1 cup broccoli
-1 cup spinach
-parmesan cheese
-1/2 cup diced onion (optional)
-1/4 cup shredded mozzarella
-1/4 cup bread crumbs (optional)


Directions:
-Preheat oven to 375.
-Once vegetables are diced, in a medium pan with olive oil- sautee onion (if you choose to add onion), then add the zucchini, toss it around for a few minutes then add your broccoli and red pepper. Once they are getting soft- add in spinach. Sautee until leaves are wilted.
- Take off heat and sprinkle parmesan cheese and (optional bread crumbs) and stir.
-Add a little olive oil to each mushroom with the inside facing up, on a baking sheet.
-Fill the mushrooms with the mixture.
-Bake for 20-25 minutes, adding the mozzarella cheese on the last 5-10 minutes of baking.


Enjoy and pair with a side of rice, or pasta or even serve them as an appetizer!
