Sweet Potato Muffins

Happy Weekend! Thank goodness I can have a weekend with nothing set in stone to do, and no exams to study for at the moment. Today I made sweet potato chocolate chip muffins!! Oh man, are they delicious! I was not sure what to expect when I tried these, but I'm really glad that I did.
These are perfect for getting some vegetables in, and a great way to jumpstart your morning or post workout! The recipe is below!! Macros for mini muffins, per muffin: 11 carbs, 2.7g fat and 3g protein (per mini muffin, will change if made into large muffins)


Sweet Potato Choco Chip Muffins

I made these muffins as mini muffins, 24 mini muffins, but you can also make them into larger muffins. 
1 1/2 cup mashed sweet potato
2 eggs
1/4 cup sugar free syrup
1/2 cup milk (you can use skim, almond, coconut whatever you prefer)
1/2 cup plain greek yogurt (1 serving size container)
2 Tbsp olive oil
1 1/2 cup whole wheat flour
dash of salt
1/2 cup chocolate chips
1 tsp. baking soda
1 tsp cinnamon

1. Preheat over to 350, spray baking pan with cooking spray
2. Mix dry ingredients in a medium bowl (flour, salt, cinnamon, baking soda)
3. Mix wet ingredients in a separate bowl (yogurt, potato, milk, oil, syrup, eggs)
4. Combine and mix well, adding the chocolate chips.
5. Place into the baking pan then place into oven for about 15 minutes (use a toothpick for judgement)
6. Enjoy!!! So yummy!!!
