Healthy Holiday Thumbprint Cookies

We have 13 days until Christmas! 12 Days until my favorite, Christmas Eve! Holidays are always full of sugar, which is not good for our overall health to consume in large amounts.  Think about it- we eat candy, pies, cakes, everything with refined sugars, which then throw us into a sugar coma. 
This year I am not making my usual Christmas candy/cookies due to not wanting all of the sugar, going out of town and because I have been working my tail off for my honeymoon to Aruba.  

We cannot cut the fun completely out! So here is an amazing recipe for thumbprint cookies! There is no refined sugars (3g natural sugar per cookie total) and they are gluten free!!  You read that right! These are totally friendly for those who are diabetic and have a gluten intolerance! 


Holiday Thumbprint Cookies (Yields about 20 cookies)



  • 1 cup coconut sugar
  • 2 cups GF flour
  • 2 tsp cornstarch
  • 1/4 cup water
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 Tbsp. unsalted butter, melted
  • 3 egg whites, one separate
  • 1 Tbsp. Vanilla
  • 1/2 cup walnuts, crush into small pieces with rolling pin
  • 1/2 cup sugar free Smuckers Raspberry Jam
Directions

  • Preheat oven to 350 degrees
  • Mix together flour, sugar, corn starch, baking powder and salt. In a separate bowl, mix together butter, vanilla and TWO egg whites only. Add these together, add water. Let sit in refrigerator for 15 minutes.  
  • Crack other egg white into a separate bowl 
  • Roll the dough into balls, dip in egg white and then crushed walnuts
  • Place dough on cookie sheet, press with finger in the center
  • Fill the center with the sugar free jam
  • Bake for 10 minutes, let cool for 5 minutes before eating and removing from tray.
